Ingredients

  • 1 medium green cabbage about 2 pounds
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika optional
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon balsamic glaze optional, for serving

Equipment

  • Air fryer
  • Sharp knife
  • Cutting board
  • Pastry Brush

Method

  • Preheat your air fryer to 380°F (190°C) for 2-3 minutes.
  • Remove any loose or damaged outer leaves from the cabbage. Place the cabbage on a cutting board with the stem side down for stability.
  • Using a sharp knife, cut the cabbage from top to bottom into 1-inch thick slices, keeping the core intact to hold the slices together. You should get 4-5 'steaks' depending on the size of your cabbage.
  • Brush both sides of each cabbage steak with olive oil, making sure to get into the layers.
  • In a small bowl, mix together the garlic powder, paprika (if using), salt, and pepper. Sprinkle this seasoning mix evenly over both sides of the cabbage steaks.
  • Place the cabbage steaks in the air fryer basket in a single layer, making sure not to overcrowd. You may need to cook in batches depending on your air fryer size.
  • Air fry for 6 minutes, then carefully flip the cabbage steaks and cook for another 4-6 minutes until the edges are caramelized and crispy, and the center is tender.
  • Remove from the air fryer and serve immediately. Drizzle with balsamic glaze if desired.

Notes

Don't remove the core when slicing as it helps hold the cabbage steaks together. For extra flavor, experiment with different seasonings like Italian herbs, curry powder, or smoked paprika. Leftover cabbage steaks can be refrigerated for up to 3 days and reheated in the air fryer at 350°F for 2-3 minutes.
