Ingredients
  

For the Beef
  • 1 lb chuck roast cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 tbsp Worcestershire sauce
  • 2 tsp all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
For the Vegetables & Broth
  • 2 medium russet potatoes cut into 1½-inch chunks
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1/2 cup celery sliced
  • 1 1/2 cups beef broth low sodium
  • 1 tbsp tomato paste
For the Seasonings
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • 1 tbsp fresh parsley chopped, for garnish

Method
 

Prepare the Beef
  • In a bowl, toss beef cubes with olive oil, Worcestershire sauce, flour, salt, and pepper until evenly coated.
  • Preheat your air fryer to 400°F for 3 minutes.
  • Place the seasoned beef in a single layer in your air fryer-safe dish and cook for 5 minutes, shaking halfway through to brown all sides.
Combine Ingredients
  • Reduce air fryer temperature to 325°F.
  • Add potatoes, carrots, onion, garlic, and celery to the dish with the beef.
  • In a small bowl, whisk together beef broth and tomato paste, then pour over the meat and vegetables.
  • Add thyme, bay leaf, and paprika. Stir gently to combine all ingredients.
Cook the Stew
  • Cook in the air fryer at 325°F for 20 minutes, stirring halfway through cooking time.
  • Check that beef and vegetables are tender. If needed, cook for an additional 3-5 minutes.
  • Remove bay leaf. Let stew rest for 10 minutes before serving to allow the sauce to thicken slightly.
  • Garnish with fresh parsley and serve hot.

Notes

For even more flavor, marinate the beef in the oil and seasonings for up to 2 hours before cooking. Use a deep dish with sides at least 2 inches high to prevent any spillover. If you prefer a thicker stew, mix 1 teaspoon cornstarch with 1 tablespoon cold water and stir into the hot stew after cooking, then let stand for 5 minutes.
