Ingredients
  

For the Chicken Livers
  • 1 pound chicken livers trimmed of connective tissue
  • 1 cup milk for soaking
For the Coating
  • 1/2 cup all-purpose flour
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pinch cayenne pepper optional

Method
 

Preparation
  • Trim chicken livers of any connective tissue, green or discolored parts. Rinse and place in a bowl.
  • Pour milk over the chicken livers and let soak for at least 30 minutes or up to 8 hours in the refrigerator. This helps remove any bitter flavor.
  • In a separate bowl, combine flour, paprika, garlic powder, onion powder, thyme, salt, pepper, and cayenne (if using). Mix well.
Cooking
  • Preheat your air fryer to 380°F (193°C) for 3 minutes.
  • Drain the chicken livers and pat them completely dry with paper towels. This is crucial for crispiness.
  • Dredge each liver in the seasoned flour mixture, shaking off excess.
  • Lightly spray the air fryer basket with olive oil spray. Place chicken livers in a single layer in the air fryer basket, making sure they don't touch (cook in batches if needed).
  • Lightly spray the tops of the chicken livers with olive oil spray.
  • Cook for 6-7 minutes, then flip each liver over. Optional: sprinkle a tiny pinch of brown sugar on each liver for caramelization.
  • Continue cooking for another 6-7 minutes until golden brown and crispy. They should reach an internal temperature of 165°F (74°C).
  • Serve immediately for the best texture and flavor.

Notes

For best results, don't skip the milk soak - it really does improve the flavor and texture. Make sure not to overcrowd the air fryer basket, as this prevents proper air circulation. These chicken livers are best enjoyed fresh, but can be stored in an airtight container in the refrigerator for up to 2 days. Reheat in the air fryer at 350°F for 3-4 minutes.
