Best Air Fryer Smashed Potatoes: Crispy Garlic Recipe

Ingredients
  

  • 1.5 lbs baby Yukon Gold potatoes about 12-15 small potatoes
  • 2 tbsp olive oil plus more for brushing
  • 4 cloves garlic minced
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1 tsp fresh rosemary finely chopped (or 1/2 tsp dried)
  • 1 tsp fresh thyme leaves only (or 1/2 tsp dried)
  • 2 tbsp fresh parsley chopped, for garnish

Method
 

  • Place the baby potatoes in a medium pot and cover with cold water. Add 1 tablespoon of salt to the water. Bring to a boil over medium-high heat.
  • Boil potatoes for 15-20 minutes, or until fork-tender but not falling apart. Drain in a colander and let cool for 5 minutes.
  • Preheat your air fryer to 400°F for 3 minutes.
  • Place each potato on a cutting board and gently smash with the bottom of a flat glass to about 1/2-inch thickness. Be careful not to completely flatten or break apart the potatoes.
  • In a small bowl, mix olive oil, minced garlic, salt, pepper, rosemary and thyme.
  • Brush both sides of each smashed potato with the olive oil mixture. Work in batches if needed, depending on your air fryer size.
  • Place the smashed potatoes in a single layer in your air fryer basket, making sure they don't overlap. Cook at 400°F for 10-12 minutes, flipping halfway through, until golden brown and crispy on both sides.
  • Transfer to a serving plate, sprinkle with fresh parsley, and serve immediately while hot and crispy.

Notes

For extra crispy potatoes, ensure they're thoroughly dried after boiling and don't overcrowd the air fryer basket. These are best enjoyed fresh, but leftovers can be stored in an airtight container for up to 3 days and reheated in the air fryer at 370°F for 3-4 minutes. Try variations like adding Parmesan cheese in the last 2 minutes of cooking or topping with everything bagel seasoning before air frying.
